Apple cider vinegar is made by fermenting crushed apples. During this process, natural sugars are converted into alcohol by yeast and then into acetic acid by beneficial bacteria. Acetic acid is the primary active component responsible for many of the health effects associated with apple cider vinegar. Unfiltered apple cider vinegar also contains what is commonly referred to as the "mother," a cloudy substance composed of proteins, enzymes, and beneficial bacteria.


One of the most promising benefits I have observed in research is apple cider vinegar's ability to help regulate blood sugar levels. Several studies suggest that consuming apple cider vinegar before or during meals may improve insulin sensitivity and reduce the rise in blood glucose after eating carbohydrate-rich foods. This can be particularly beneficial for individuals with prediabetes or type 2 diabetes. However, I always emphasize that apple cider vinegar should never replace prescribed medications or professional medical advice.

Another area where apple cider vinegar has shown potential is weight management. Research indicates that acetic acid may increase feelings of fullness, leading people to consume fewer calories throughout the day. While the weight loss effects are generally modest, incorporating apple cider vinegar into a balanced diet may support long-term weight management efforts. I believe it works best when paired with regular physical activity and nutritious eating habits rather than being relied upon as a quick fix.

Digestive health is another frequently discussed benefit. Some individuals report improved digestion after consuming diluted apple cider vinegar before meals. Although scientific evidence remains limited, the vinegar's acidity may assist in breaking down food and promoting digestive processes in certain people. Additionally, the "mother" found in raw, unfiltered apple cider vinegar may contain beneficial bacteria that contribute to gut health, although more research is needed to fully understand these effects.

Heart health is another promising area of investigation. Animal studies have suggested that apple cider vinegar may help lower cholesterol and triglyceride levels, both of which are important factors in cardiovascular health. While human studies are still relatively limited, maintaining healthy cholesterol levels through proper nutrition remains an important goal, and apple cider vinegar may offer modest support as part of a heart-healthy lifestyle.


Apple cider vinegar also possesses antimicrobial properties. Laboratory studies have shown that it can inhibit the growth of certain bacteria and fungi. Historically, vinegar has been used to clean wounds and preserve food because of these antimicrobial effects. Although these findings are encouraging, drinking apple cider vinegar should not be viewed as a treatment for infections.

Based on current evidence, I recommend consuming apple cider vinegar in moderation. The safest and most commonly recommended dosage is one to two tablespoons (15–30 milliliters) diluted in at least one full glass (240 milliliters) of water. Drinking it before meals, especially before lunch or dinner, appears to be the most effective timing for blood sugar management and appetite control. I advise against drinking it undiluted because its high acidity can damage tooth enamel and irritate the throat.

For beginners, I suggest starting with one teaspoon diluted in water once daily. If no discomfort occurs, the amount can gradually be increased to one or two tablespoons per day. Most research has evaluated daily consumption, and there is currently no strong evidence that taking more than two tablespoons each day provides additional health benefits. Moderation remains the key to safe use.


Despite its potential advantages, apple cider vinegar also has several drawbacks that should not be overlooked. One of the most common concerns is tooth enamel erosion. Because vinegar is highly acidic, frequent exposure can gradually weaken the protective enamel covering the teeth. I recommend drinking diluted apple cider vinegar through a straw whenever possible and rinsing the mouth with plain water afterward. It is also advisable to wait at least 30 minutes before brushing your teeth.

Another possible side effect is digestive discomfort. Some individuals experience nausea, stomach irritation, or acid reflux after consuming apple cider vinegar. People with ulcers, gastritis, or severe acid reflux disease should consult a healthcare professional before adding it to their diet.

Apple cider vinegar may also interact with certain medications. Individuals taking insulin, diabetes medications, diuretics, or medications that affect potassium levels should exercise caution. Excessive consumption may contribute to low potassium levels, which can negatively affect muscle and heart function. As a researcher, I strongly encourage individuals with chronic medical conditions to discuss apple cider vinegar use with their healthcare provider.

It is also important to recognize the limitations of the available research. Many studies on apple cider vinegar involve relatively small numbers of participants or short study durations. While the findings are encouraging, larger and longer-term clinical trials are necessary before making stronger conclusions regarding its effectiveness.


In my professional opinion as a health researcher, apple cider vinegar can be a useful addition to a healthy lifestyle when consumed responsibly. Its strongest evidence supports modest improvements in blood sugar regulation, appetite control, and possibly weight management. However, it is not a substitute for a balanced diet, regular exercise, adequate sleep, or medical treatment. Individuals should approach apple cider vinegar with realistic expectations, recognizing both its potential benefits and its limitations.

Ultimately, the greatest health improvements come from consistent healthy habits rather than relying on any single food or supplement. Apple cider vinegar may serve as one helpful tool within a comprehensive wellness strategy, but lasting health is built through informed choices, moderation, and evidence-based practices. By understanding both the pros and cons of apple cider vinegar, individuals can make informed decisions that best support their long-term health and well-being.
